Parts of the original film did this too and even ignored the fact that it was a tournament at the end IE Johnny Cage not taking on Shang Tsung after he beat Goro.

Shang Tsung made a deal with Johnny Cage; an exception to whatever tournament rules were already in place. Hence why Shang Tsung challenged Sonya and took her to Outworld. This was made quite clear in the film. And if it makes you happy, Shang even challenged Johnny Cage (like a pussy) right before Liu Kang interrupted his cowardly act.
The only other "random" fight was Reptile and that doesn't count considering he was a "hidden fighter" and the movie paid homage to that fact.
The fights with the masked guards obviously don't count either because they weren't even competitors. They were fighting the chosen warriors for snooping around where they didn't belong.
So now, what on God's beautiful green and blue Earth did the first movie do to not be a tournament?
