How do you unlock Lei Mei ?

The little town in earthrealm where the chest containing her koffin key is closed off. Ive tried waiting for the door to open, even meditated so the time will pass but nothing. Is there a key you have to get to open that town gate or a side quest.....help, she and Liu Kang are the only ones I need?

later in the game you can get access to the village. just continue doing what you have to do and you will eventually get there.

how much later? do you have to beat konquest first?

No you don't have to beat it. You will be close to the end though when you do find her. Its in a hut I think near where you train with her. I just remember training with her and unlocking her at about the same time. If Hotoru arrest you, you just missed it.
