If you look really closely to some of the pics of him and his pony tail, you can see that the hair is pulled back tightly. It just looks like he's bald in the older pics. Although, I haven't seen any of the newer, better pics of him in that outfit.

He could be bald. Sub Zero is the only character in the MK series that actually shows signs of aging as seen in MKDA. Although since he looks like a samerai in his nija outfit maybe the hair is for him to look more like one.

I just saw his render from the German PSM and if it is legit, then Sub-Zero is bald. His hair is indeed not pulled back. He looks like a monk with a ponytail. I dig it.

Yes, he is indeed bald with a ponytail. At first I hated the look, but now it's grown on me and I rather like it. Not as much as his primary costume, but it's still good. Gives him much more of the older/wiser/grand master feel to me.
