Hmmm.....same with Motaro. Supposedly, he's only around once a year as well.
My guess is the same goes with Goro.

I am replaying Konquest because I missed stuff. So I opened the chest in the thicket, and he walked from behind a tree, looked at me and vanished.

Also give me more of an idea of where you saw him, give a good description for me please, as I am dedicating to seeing him

Motaro appeared for me in Earthrealm close to Bo Rai Cho's hut. When I talked to him he made the motion of reaching into a pocket (does he have a pouch like a kangaroo or something? lol) and I got a thousand gold coins but he didn't say anything and dissapeared right after. Sorry, no details on what day or month it was, but it was light out if that helps.
To tell you the truth he looked pretty crappy, he was really short and had kind of a slapped together look. If he is the super unlockable like that BS gamefaqs posted then I'm REALLY not looking foreward to him.
You can also find Meat in the Netherrealm, just meditate in front of a little cave, (I think it's by where Havik and Noob are) he'll appear and fork over some coins.
I'm still looking (hoping) for a sign of a fully functional MK:D Goro or Kintaro, they would kick friggin ass in the new fighting engine.
