Keep in mind that these may change but this is everything as far as I can see for now.

Ermac: Hua Chuan, Choy Lay Fut, and Axe.
Sub-Zero: Shotokan, Dragon, and Kori Blade.
Nightwolf: Tae Kwon Do, Valtudo, and Tomahawks.
Hotaru: Pi Gua, Gojuryu, and Naginata.
Scorpion: Hapkido, Moifah, and Mugai Ryu.

I haven't been able to make out Sindel's or Ashrah's because of IGN's seal.

The Naginata is a staff with a blade on the end. Sindel has a similar weapon. Scorpion's Mugai Ryu is a straight sword that appears smaller than the ninja sword. Ashrah's weapon is also a sword (name unknown) that reminds me of a smaller version of the Soul Reaver.

Li Mei: Baji Quan, Liu He Ba Fa?, ?
Mileena: ?, Liu He Ba Fa?, Sais
Bo'Rai Cho: Drunken Fist, ?, Jojutsu?

Sorry for all the question marks. I saw both Mileena and Li Mei use LHBF. Who knows.

Moifah? I looked it up and it said "Plum Flower Fist." confused It's a Shaolin style. Anybody know anything else about this?
