Well 1: you mispelled "kahn" and 2: there are a whole bunch of these threads already. But who cares, so i'll try to help you anyway. What i usually do is this:
Liu kang: stay back and shoot fire and when he's stunned bicycle kick him.
Kung lao: Im not usually him but i'd say just keep chuckin your hat at him. Sub-Zero: Freeze him and slide under him over and over.
Scorpion: He's kinda hard to win with but i'd still say spear and teleport kick.

No sorry I meant just shoot your ice projectile at him, it doesn't actually freeze him

just keep throwing kintaros head at him but is you are lui kand also fire your blasts at him and when he has got the hammer out and he is swinging it at you and chases you just run around the arena and do long jump around there and when he is getting his breath back just throw kintaros head at him or fire the blasts at him(sometime he punches the head away)

the most easy character to beat him with is liu kang. Make sure his dragon fire is upgraded to the triple fire move. Stay away from kahn and shoot those 3 blasts of fire at him, but conserve some energy for when he does his hammer move.
the best way to dodge his hammer is evade moves. you are invulnerable while doing them and they give you just enough space to keep evading. when he is stunned, throw kintaro's head at him, go as far as you can from him, and shoot 3 more blasts at him.
keep repeating this, and you should have success.

Here's a general tactic for all characters (Shao Kahn w/ Hammer): just run aroung arena, and when you are on one side of the arena, throw your projectile at him and keep running. When he starts swinging his hammer, run away, and when he gets too close, just Long Jump away. With your energy bar, you can do about 3 Long Jumps. Use them wisely. Only go for Kintaro's head, when Kahn is far away, or else it' would be a suicide attempt. Hope that helped.
