Because of the Dragon Medallion. Sub-Zero was able to master it, but it made him age as a result, so he appears older than he really is.

Liu Kang looks young because he is the Mortal Kombat Champion. The Champion doesn't age so he/she can defend their title until they are defeated or killed.

Ten years pass between MK1 and Deadly Alliance, so as of now, all those characters are ten years older than they first appeared, which puts most of them in their mid-to-late thirties or early forties (except for the ones who don't age obviously).

Actually, MKDA happens 10 years after the first MK tournament. Also, Cage was 29, Sonya was 26. But by MKDA, Cage was 39, Sonya 36, Liu Kang 34, Younger Sub-Zero 38, etc.
But yeah, the dragon medallion is what did it.
