Nice try, but it's been done so many times, it's nothing really spectacular. It's not terrible, it just doesn't bring anything new, the idea's been done to death.
If you wanted to make it more appealing, you should try and make a new fatality idea for Sub-Zero to perform.

That's what I was thinking - but he usually morphs back into normal form when he is gettin killed in 'finish him' mode

Not really, I mean, if your timing is like perfect you can time it so that happens, but usually once he morphs, you can kill him as the character he morphed into.
