If the MK characters competed, how well would they do, speculatively? Maybe Liu Kang can run the 100 meters in 8 seconds, but then Kabal can do the 100 meters in 5 seconds, but then Scorpion just cheats with a teleport.

Considering they are strong enough to tear off people's heads, they should be good at weightlifting. (How fast would you have to pull someone's neck to take off their head, anyway? Get on it Mythbusters!) Goro, or Kintaro should be the best at that, unless you think Kahn is physically stronger.

Jade would do well at the pole vault, and the javelin throw. Scorpion should be good at the hammer throw and shot put because he's got practice from hurling his spear all the time. Nightwolf would obviously win the archery competition. Who would win the fencing? Kenshi?
