Liu Kang vs. Zoners

So I don't have much experience with fighting games, but I've been really trying to get good at this game. So far my best character is Liu Kang, and I've had a lot of difficulty adjusting to "Zoners". Specifically, Noob Saibot, Kabal, and Kitana seem to give me the hardest time, as Liu Kang really doesn't have a good answer to their projectiles.
I try to block well and be patient, but it seems that whenever I try to jump over their projectile to close the distance, they jump in as soon as I land, so that I have to block their combo attempt. Either that or (especially in Kitana's case) they manage to stay away from me.
When they go with the "Zone and then jump at me strategy" I have an especially difficult time, because Liu Kang (at least my Liu Kang) doesn't have great anti-air and anti-projectile tools. I guess that brings up a second problem I've been having. I have some trouble deciding what to throw when somebody jumps in at me. Liu Kang's counter is pretty hit or miss in that situation, and I don't know what else I can do.
I know that some of you have been playing these games your whole life, so you have a much more intuitive perspective on these things. I would really appreciate any advice you could give me or even if you would play some matches with me on XBoxLive to show me what I can do. Thanks!

Liu Kang does have problems against zoners like Noob, but to answer your questions:
Best Anti-Air Options:
Uppercut - Liu Kang has a great uppercut--9 frames...don't sleep on how good it is.
Parry - As you said, it can be hit or miss, but if you work on the timing, it can be very effective. Also, since the ES gives you a pop-up, you can get a free combo off of anti-air.
Neutral JP (NJP) - This is one that I don't see many people using, but it is a fantastic anti-air tool. It, like Liu's ES Parry gives you a combo.
Jump Back Instant Air Fireball - Liu Kang can really control air space with his air fireball. Don't hesitate to meet them in the air with a JK cancel Air Fireball, or if they keep getting the hit when you meet in the air, jump back and Air Fireball.
Good combo followup for NJP and ES Parry:
(may need to step in or dash) B+3,1,2, Dash F+2,4 xx Bicycle Kick
1=X 2=Y 3=A 4=B
xx=Cancel (2-In-1 from normal)
Best Option Against Projectile:
There is really only one sane option, and that is ES Dragon Kick. It has a hit of armor, so you'll plow through the projectile, hit your opponent, and be up close where Liu can do his work. Note that the Dragon Kick, both normal and ES, are extremely unsafe, so use sparingly, or when you're sure they're going to throw a projectile.
The ES Bicycle Kick also has armor, but it is much slower, and not even close to as good of a punishment for zoning as the ES Dragon Kick.
I'm on PS3, or I would offer to play some matches to help you work on some things--maybe someone else on 360 can be of assistance.

Wow! Thank you so much. I didn't actually know you could cancel a jump kick into a fireball haha. And I definitely need to work on using Liu Kang's uppercut more. I already knew I didn't throw that enough.
