Who? Explain why they're useful too, it'd make this discussion much more interesting.
In my opinion, i think Sektor, Kabal, Jax, Sub-Zero have the best Assists...
Sektor's Tracking Missile - This is USEFUL as hell, it keeps the opponent at bay, while i do my own thang =)
Kabal's Ground Saw ThingyMajig - This is great to confuse the shit out of your opponent lol.
Jax's Ground Quake - 2 Words.... "Turtle Killer" i love throwing turtles off their game, it makes me beating them, much more easier =D
Sub-Zero's Ice Beam - This pretty much speaks for itself, incredibly useful against opponents jumping like they're on crack.

Sektroll has one of the best tag assists(I'm calling him that due to a tourney player having the same name, not hating) he can creep stalk you with that homing missle forever, it's the only guaranteed tag assist that will connect and leaves your opponent vulnerable for various shenanigans.
Skarlet's tag asist deals out 15% damage without having to take away any of her health, making the meter usage a respectable and rewarding risk.
Jade her reboomerang hits the opponent twice even on block thanks to the patch which means Jade's partner can troll their opponent will the opponent;s pressed trying to deal with her boomerang.
Those are the top three for me.

Well characters like Ermac, Cyrax, Nightwolf, etc. have Projectile Assists, but to be honest i consider them useless. instead of Ermac firing a Fireball, They should make it so that he does his, Force-Lift or Force Push, or Nightwolf doing his Thunder strike instead of the 3 arrows, you know what i mean? Some, if not almost all the characters have way better options than their Projectiles.
Maybe for the next game, they should make more options on Tag Assists ^.^ like being able to do more than one special for the assists.
and dammnit, i forgot to mention Rain.... Rain's Lighting is useful as hell too, how can i for get????

Raiden, the hitstun of his enhanced electric projectile is higher when used as an assist and lets you continue comboing. You can do 70%+ combos with only two bars and Raiden as your assist.

I think Kung Lao and Johnny Cage have the best assists.
Kung Lao: His assist is great for juggles. Its just a matter of finding what characters who work well with each other. It can also be used as a nice set up for combos as well.
Johnny Cage: His assist is my favorite. Its great because it shoots high AND low. So its a good anti-air and it shoots straight forward. Its a great change up and can keep your opponent guessing.

Are you 100% positive? I could have sworn it was his spin? Did they maybe change it? Anyways, I don't play tag that often so I could be wrong.

I would have to say that even though it can be risky and easily dodged, but Noob Saibots assist is fantastic. Waiting for someone to get close enough toward the end of a match, use when the your opponent has already lost one character so they can't easily switch out, and now they can't block.
After that, I immediately hit them with icebeam (obviously this move requires two bars of meter, which I don't use anyway unless absolutely necessary) and they are trapped. Go in for your punish and end the match.

The spin is Kung Lao's Tag Attack. He comes in with that attack.

Im 1000% Positive dude, his spin attack is his Tag Attack Not assist.
Yeah guys- don't forget the difference between a Tag Attack,
which tags in the other fighter,
and the Tag Assist, which just summons them for a quick attack.
As for Tag Attack,
I would say Raiden (EX Torpedo) or Smoke (EX Teleport).
For Tag Assist, it's a tougher choice- a lot of them are great.
As Espio already mentioned, Skarlet's "free" Blood Ball is useful,
and one of the only ways I know of to put a Blood Ball in a combo.
Rain's EX Lightning is great- Rain is a great tag partner, IMO.
Reptile is another great tag partner.

Another good assist is from cyrax. His bomb latches on to the opponent and launches them for a combo.

Ah shit, thanks. I knew the spin was used somewhere. I only ever use the meter to attack and never assist which is why I was confused.

How has no one said Reptile yet? It mite be my favorite to use, bcuz its great against ne1 sitting back launching projectiles, and its wicked to press opponents back with.
I would say Reptile, Sub, Raiden and Jade are the best assists.
Subs like ppl said is great for jummpers and aggresors that forget theres a block button.
Raiden and Jade can both hit twice, once front and one behind, and with timing, this can be beautiful. Shang Tsungs three skulls is a good one 2. Sheevas too. I have noticed my Sheeva is pretty beast bitches.
Worst: Sindel, since you need to be up close

i play tag exclusively and very rarely use the assists, however I main Sub, and smoke's assist honestly is the best that I've found to pair with Sub
It can catch people off guard and launch them for a short combo, however the deadliest way to use it I've found is mid combo. Since Sub Zero lost his reset when i'm not having CSZ back up SZ I'll use smoke.

Smoke has a great assist since his smoke bomb can be used as a combo extension set up.
This may be patched now. When it wasn't, Nightwolf and Sub Zero were the best tag team.

It depends on those whose projectile can effect really greatly.
With Reptile, I hate that darn forceball of his since it takes up half the screen and nearly impossible at times to jump over unless timed really perfectly.
With Sub-Zero's you have to block.
Jade and Raiden, as someone already mentioned, they shoot two projectiles.
True, that some of these characters could have used their other moves, and I agree with how Ermac could have been done differently , and Nightwolf could have thrown his axes and such... I wouldn't really go with the lightning.

I played shang tsung in tag yesterday and his tag attack is soul steal and his tag assist is 3 straight skulls..... But when I first played this game, I remember doing a combo fast tag with kabal and shang tsung assisted me with the 3 GROUND skulls.... Did they change that in a patch? or can he ground skull off of certain tag combos or fast tag combos.
