Its not hard to do the moves with a stick. It just takes some practice. Once you get used to it, no problems.

You uh, move it around lol. Who's are you trying to do in particular? Some that require pressing up you have to hold block and do it so you don't just jump.

Actualy you don't have to hold block, it just makes it a whole lot easier, as long as you can tap up without jumping then it's ok. Like right after landing another jump or after any move (special or regular move like punch or kick).

Not sure if this is the kind of advice you are looking for, but try to avoid "gripping" the stick. Hold it loosely and sort of tap it with your fingers. You'll end up using your thumb for "up" and "left" and the rest of your fingers for everything else.
