Heh, they can be done, you just gotta know how to do 'em
For the Liu Kang 2X (or 3X depending on which vid you watch) I went into the control settings for Mame UMK3 (Rev 2.1) and made it so LK was both a button on the controller I use, AND a button on my keyboard... I charged up the bike kick with LK on my controller, released, then immediately held down LK again - but this time on the keyboard - and after that connected, (for the 3X bike kick) I charged up LK once more, this time on the controller again.
Once that hit, straight into the 7 hit auto combo and standing HK to finish. I also did it in MK3 for the extra damage (does more damage in MK3 than UMK3) and there you have it, 11 hits - 80% (or 10 - 68% if it was the 2X).
Oh, the timing to get the multiple bike kicks to connect as part of a combo is very hard to get down, but once you get the timing it's not too difficult.
I got the inspiration for the combo actualy from playing the cpu, where it did a double bike kick and auto combo on me in the corner.

For the Cyrax one, it was also done in MK3 - where you can throw a net, and then a bomb. They changed it so you can't do that in UMK3...
