I found out a way in "Mortal Kombat" for the Sage Genes for stopping opponets fatalities. When the game shows, "finish him" on the screen, press and hold start, the block botton, untill you drop to the ground. Your opponent's fatality move will not happen. Fact, the opopent that can make the last move will not attempt a fatality move in the match as long as the start is held down, even if the the oppont is entering a finishing move correctly by a game's controllor. I am not sure if this also works for the Super Nintendo's "Mortal Kombat". If anyone has any comments regarding this tip please post them.
