They both had like a drillion updates and ports.

Lets Look At Street Fighter 2

Super Street Fighter II: The New Challengers
Super Street Fighter II Turbo
Hyper Street Fighter II: The Anniversary Edition
Street Fighter II: The World Warrior
Street Fighter II: Champion Edition
Street Fighter II Turbo: Hyper Fighting
Super Street Fighter II Turbo HD Remix

Now lets look at Mortal Kombat 3

Mortal Kombat 3
Ultimate Mortal Kombat 3
Mortal Kombat Trilogy
Mortal Kombat Advanced
Ultimate Mortal Kombat

You need to know the difference between a revision and a port. Ports aren't a big deal.

Edit: Just for clarification, here are the revisions in order of release, not including internal revisions (which Mortal Kombat was more strict with).

Street Fighter II
* Street Fighter II (1991)
* Street Fighter II': Champion Edition (1991)
* Street Fighter II': Hyper Fighting (1992; a.k.a. Turbo)
* Super Street Fighter II (1993)
* Super Street Fighter II Turbo (1994)
* Hyper Street Fighter II: The Anniversary Edition (2004)
* Super Street Fighter II Turbo HD Remix (2008)

Mortal Kombat 3
* Mortal Kombat 3 (1995)
* Ultimate Mortal Kombat 3 (1995)
* Mortal Kombat Trilogy (1996)
