A lot of the fatalities for the characters added in Ultimate and Trilogy were done with as few new frames of animation as possible, as I ranted about in a different topic. In MK1 they used punch frames and Sub's stance for the head rip and just had to add the dangling spine. For this they didn't add the dangling spine so they just had him do a punch that looked like a head grab and faded out. Its just like the Scorpion Pack fatality, the rain uppercut fatality or lightning fatality, etc etc.
