Kung Lao split hat fatality mk2 it is very unique and looks sick.

Sub-Zeros spine rip was easily the best in my opinion, of course.

I liked Lui Kangs MK4 dragon fatality. I loved it when he slung them around.

Quan Chi's pull off leg and beat them to crap fatality. That's the best one IMO.

Here goes...

MK1- Liu Kang (don't ask why), Cage's Snes chest kick.

MK2- Kung Lao's hat split, both of Cage's, Jax's arm rip.

MK3- Both of Ermac's, both of sektor's, both of Sub Zero's, both of Shang Tsung's

MK4- Jax's arm rip (I'd have to say thats my overall favourite), Quan Chi's leg beat, Scorpion's toasty fatality, Reiko's chest kick.

MK:DA- Kung Lao, Quan Chi, Shang Tsung.

Of course they can't all be my favourite, but those are just the fatalities that stick best in my mind when i think of those games.
