I'm all for a graphically prettier dragon fatality. And this is Liu Kang, not Marshall Law, even though they are both Bruce Lee ripoffs

Hmmm... I'd actually prefer this scenario:
Liu starts meditating as energy starts swirling around him and he sends an energy beam in the shape of a dragon towards the enemy, which consumes him. Organs and blood scatter, and a few bone fragments remain on the ground.
Or: Liu fires a whole rain of fireballs at the enemy, which turns into charcoal

My 2 fatality ideas & hari kari:
1. Liu shoots a dragon-shaped fireball (like Shang in the intro), which mainfests into a real dragon, constricts the opponent, then breathes fire on them, & they burn, until Liu kang backflip kicks their head off.
2. Liu does his classic bicycle kick, then turns into a Dragon & chomps their head off.
