I thought Sub-Zero was American...

And Ermac looks kinda American too.
The problem with this whole question is it's based on nationality, not race. The question should be "Is Sub-Zero Asian, or caucasian."
We know from the now deleted MK Mythologies official home page that Sub-Zero was indeed born in the United States. However, that tells us nothing about his race, which is the only thing that would effect what he looks like. I mean, can you really tell the difference between a Chinese-American and a Chinese man? I can't...that's just location.
Anyway, I always figured from what was infered, that Sub-Zero's mother wanted to get the children away from the life of an assassin that their father lived. Sub-Zero was probably either born in, or raised in California or another state on the pacific. As best I can tell, they were all chinese immigrants.
Man, revisiting this old subject makes me want to know more about them. Like who is the sister? (probably Frost.) I've always wanted to know Sub-Zero's real name (both of them) so instead of Classic sub-Zero, and Sifu Sub-Zero, we can call them Bob and Joe, or whatever their first names are.

I can't even comprehend how so many people are still confused about this statement, after this was explained perfectly in the first 3 or 4 posts.
They are NOT making Sub-Zero himself look Asian, they are making his OUTFIT look Chinese.
The Lin Kuei are a clan of 'ninjas', that do not consider themselves ninjas. They are based out of China. Hence, a more Sino-inspired outfit is the look that the MK team is going for, and storywise, Sub is probably trying to preserve the traditions of the clan's heritge. As Temp pointed out, the Lin Kuei recruits warriors from all around the world. Sub-Zero's face was Asian in MK2 because it was just one of the staff members posing for Sub-Zero's ending. In MK3 they decided to go with a different look for him, shedding the ninja outfit, and John Turk ended up doing the motion capture, who is subsequently a white man. From that point onward, Sub-Zero was white. They had no idea at that point how far they were aiming to develop Sub-Zero's story, so that's why he looked like an Asian man in his MK2 ending, but now looks like a caucasian american man from MK3 onward...the character was just developed.
