You must fight Li Mei in the Chaos Realm and beat her to gain her second outfit. She is in the village to the west I believe. Most of the coffins are locked and in order to unlock them you need keys, and here is what I've learned on obtaining keys. You can find them laying around. You can find them in coffins. Sometimes after completing a mission you get them, and finally sometimes you must defeat certain fighters in combat to obtain them. Every time you run into someone, fight them. You never know which one will give you a key. The hardest one is trying to beat Kira in 15 seconds, but it is possible.

I found Lei Mei's 2nd outfit in the order realm...go to the farthest outside ring of the Order realm(all the homes/grass/streams) and she is standing in the corner of one of these areas...I believe either the red or blue...shes not hard to find, but fight her and beat her...and you get her costume.
FYI, shujinko's bio is in the Order Realm, along with Liu Kang's alt bio, the Kuatan palace, Lei Mei's flip kick for Shujinko, Shujinko's 2nd fatality, and Shujinko's power fist (all after you have beaten konquest)
The easiest was to find them all is to explore the Order realm in rings...There are 4 colors red, blue, green, and yellow...explore each of these systematically(starting from the inside ring-outward) and you will easily find everything.
If only the other realms were that organized...

correction: shujinko's flip kick and power fist are both in edenia...but his fatality 2 is in orderrealm in the governor's building...in the center of the realm...
