Here's a partial list:
MORE KARATE STYLES: The MKDA gave Cage "Karate", but yet there were several styles of Kung Fu, that weren't simply named "Kung Fu".
NAGINATA: Longsword/staff combo, like a halberd but infinitely cooler.
NINPO: One of the many Ninja martial arts. Like Ninjitsu.

Some styles need to be a little faster, a little more powerful or just a little more balanced and well rounded.
For new styles, they should try to keep a fair balance according to the character. Powerful and slow styles to your larger characters and the weaker, less damaging ones to the smaller characters. ANd in some cases, do a complete opposite for surprise.
Each style should have a good range of attacking options though, to counter and to attack. I felt a lot of the MKDA styles were only good enough for either defensive play or offensive play.
For characters like Shao Kahn (assuming he is in) I would like to see a style that emphasizes on attacks that utilize the fist, palm, elbow and knees. (Kinda like Tang Soo Doo but more unique)

These are just a few I could come up with at the top of my head. I'm more confident about the weapons than the fighting styles - those I just looked up online at one time and could only give the simplest description.
The MK team has their work cut out for them if they're going to come up with 48 unique styles (if they are indeed unique).

I think that some characters should trade styles. Some styles didn't fit some characters too well, so maybe some one else can benefit form a style change.
Kenshi for example could use Mavado's Wing Chun style. Here's how Kenshi should look using his new style.

HIKARITEN: Defensive martial art from Japan, mostly blocks, shoves, and sidesteps. It's the non-violent art, so it might not fit in MK, but the MK team just may be able to find a place for it.
SAI: Make the sai style like it really is. No or little stabbing, more reversals.
NOGA: Ancient Greek (Atlantian?) art said to be created by a God. It's not very well-known, but because of my religious background, I was forced to study it. It relies on dealing as much damage as possible, and has very little defensive tactics.
BOKKEN: Yes, I know, it's basically used for training, but I've seen some impressive things done with a bokken that you can't do with a sword.
BATOU-JUTSU: The true name for the Hiten-Mitsurugi style. Most of the attacks are done by quickly pulling the sword out of the sheath, slashing, and quickly replacing it in the sheath.
CAPOERIA: The Brazillian breakdancing art, just don't make it so stereotypical, like in other fighting games.
SUMO: Why didn't Bo Rai Cho' have it in DA? Some of his specials and his Fatality were based in Sumo...

I wasn't specifically referring to your post, I was saying that generally you see it spelled as "CAPOERIA" which is incorrect. I'm not familiar with the art of "CAPOEIRA" either, but I'm pretty familiar with speaking portuguese
It's really normal that people commit spelling mistakes while writing another language (I probably do some spelling mistakes writing in English) I'm just surprised to see that the majority of articles where you read about it it's spelled the wrong way...

I think for weapons they should have a Big Battle hammer or battle axe. I also think that like a celtic warrior could be a cool additon to the game they never really went in that direction at all.
