You won't be able to change his fighting styles. End of story.

i saw Shujinko use mantis and shaolin fist in a video, HOWEVER I did saw him use, Raiden torpedo, the ice blast, scorpion's spear and Ermac telekinesis all in the same round so right now the evidence looks like we won't be able to choose his style but we will be able to choose his moves... am I right?

You did saw him use, Raiden torpedo? Nice typing.
Anyways, he could very well have selectable moves. I'm thinking maybe you can choose 5 or 6 special moves of your choice, or maybe he has one special move from each character. That is unknown at this time, but he will indeed have those 3 mentioned fighting styles.

They don't appear to be selectable per se, you 'unlock' the ability in Konquest which gives you a key to buy the move in the Krypt for Arcade. At least, thats what I believe the guy who tested Konquest was pointing out when he said "3 of the Koffins left are Shujinko's moves."
Ed Boon said "Your Shujinko could have a move no-one elses does." which clearly indicates that you can have unlocked it when others don't have it unlocked, not meaning you've customised it.
