Under their masks
Why do some kombatants were masks? I've never seen Kabal, Drahmin and those ninjas without their masks.
Since Kanshi is blind, I've never seen his eyes under his blindfold.
How did Kano get his metal thing on his eye? And dose Shinnok have any hair under his crown?

Well, Rain's eye and Hair was shown if you count that. We also know that he seems of caucasian descent. It's not much, but it gives us a general idea of what he looks like.

Scorpion was unmasked in his early Fatalities and in his Deadly Alliance alternate costume. He has a flaming skull for a face.
Sub-Zero 2 was unmasked in MK3-Trilogy and in Deadly Allinance. He has long scar running down from his eye (Though his attires in Deception and his armor costume in Armagedon don't show the scar.).
Ermac was originally going to be unmasked in Deception until the MK team decided to make him look more like his old ninja costume. His alternate costume in Deception and Armagedon expose the top of his head, revealing that he has gray, spikey hair. Don't let the gray fool you though as his original concept drawing for Deception, the one without the mask, made him look like he was quite young.
As for Kano, he's never been seen without his eyeplate. Some underground criminal scientist emplanted that in him. This is the same scientist that gave Hsu Hao his mechanical heart. Kano obviously wears his eyeplate to shoot lasers though I think it also enhances his vision (Though that might just be non-cannon hearsay...).
Going back to Drahmin, you could also see his face every time you switched to his Oni stance in Deadly Alliance. He wears his mask to keep his rage in control. Without it, he's just another mindless, rampaging Oni.
Kabal was seen unmasked during one of his Fatalities in MK3-Trilogy. He wears it because Motaro and his Centaur Death Squads nearly killed him and completely butchered his face. He wears that mask as a respirator and can't live without it.

there is a major difference between mindless and psychotic rages.
Drahmin suffer from psychotic rages and the Mask is what calms him down.
In game: It has magic to it.
Real world: It is a psychotogical buffer.

You can see Noob Saibot unmasked in Mortal Kombat Gold by chosing his alternate color.
However, Shao Kahn has never been seen unmasked.

Actually, Shao Kahn has been seen unmasked. There's the MK2 comic book by John Tobias, this one book about MK3, and then MKSM.

Subby the 7th has played the games and knows about the Mk books.
Yes MKSM has an unmasked Shao Kahn.
Also In Mk 2 comic book, there is at least one instant from the top of my head that Shao Kahn has his mask off.
Also MK Annilation, Shao Kahn has his mask off.

In Shaolin Monks, Kabal is seen without his mask. Also, though not noted, Cyrax was without his mask in his DA alternate. And let's not forget Reptile, who no longer can wear a mask.
