Each film crew, directors, and choreographers have their own style. Matrix had it's very fluid, smooth, artistic, and creative way to do the fight scenes. Kill Bill was more fast-paced, quick-thinking fighting, Blade has it's fast-paced, "can't blink or you'll miss it" fighting, or perhaps someone from Spider-Man or X-Men who had the very cartoonish, but realistic approach.
