his mother is american, and his father originates from a race of cryomancers hailing from outworld. simply because he has a asian name is because he was taken to china as a infant to train and become an assassin.

Most people tend to forget most Amerasians/Eurasians tend to lose their Asian features as they grow older and end up looking like they have no Asian ancestry at all.

So about his father: was his father from Outworld and his mother from Earthrealm? Maybe his mother was Chinese. That would explain his children having somewhat Eastern Asian features. I would assume that he had even more profound Eastern Asian features since he is second generation, and Bi-Han and Kuai Liang are third generation (and half white). Also, I wonder if he was a Cryomancer, as well; maybe it doesn't get passed to every generation.
