On 'mortalkombatwikia.com' it is stated that, in the intro movie from MKD, Quan Chi made a quick escape through the portal just before Raiden accomplished his suicide blast (although for a long time, I thought he got caught by the explosion, just like Shang Tsung). I guess it would mean Quan Chi sensed the impending danger and ran away, implying he feared for his life, implying he is really a mortal. But then, on several other sources it says Quan Chi is an immortal demon; it's really perplexing. Could it be that he can only be killed by forces of higher level, for example Raiden's energy, rather than by a mere mortal's hand?

mkwikia is full of errors and fan fiction. You cannot trust that site. Shang Tsung's MKA bio confirmed that Quan Chi was killed in the explosion too. He did not escape at the last second.
Quan is a demon, but he's not immortal. (Well, he is the kind of immortal that doesn't age. He's not the kind that can't be killed.) Demons can die. Dying will send their souls to the same place it sends everybody else, the prison areas of the Netherealm.

The thing about dying in MK is, though, it's possible to escape from Hell. Especially if you're on good terms with Shinnok. He can just let you free. So that's how all the dead badguys like Quan came back to life in MKA.

Dying in Mortal Kombat is like dying in a comic book.

The only characters that stays dead is Great Kung Lao, Sonya Blade's Brother, and Liu Kang's Parents.

Of course Quan Chi can be killed. It just depends if the fucker stays dead.

As for Quan Chi running away from Raiden's suicide blast: Do you realise how much dying actually hurts?

I imagine being vaporized only hurts for a fraction of a second and then you feel nothing at all, what with not having a brain or nerves to feel things with.
But hey, if I was standing next to a guy who was about to explode, I'd damn sure try to run, too.

Mortal Kombat villains, in general, tend to say rather curious remarks about what they are and which abilities they possess.I remember for example the quote from Quan Chi:"I haven't a life to give, you fool!", or Sareena telling Quan Chi, in MK:SZ, that "a mortal (Sub Zero) has escaped from the prison of souls", implying that both Quan Chi and she are likely to be immortals. Then Shang Tsung in the first MK movie, calling humans mortals on quite a bit of instances, also implying his supposed immortality.

And yet all of them got killed off eventually. You'd come to ask yourself why the hell they were repeating all that "I'm immortal" thing if, in the long run, it proved to be wrong. Hell, in MKDA, it was implied even Shao Kahn is mortal (the two sorcerers planned to kill him off, or at least so I remember).

The word "immortal" also refers to people who are immune to age or disease, can't die by natural means, but could still be killed by someone else. It doesn't just always mean "can't be killed".
Lots and lots of people make that mistake, and I never quite understood why, because it's a fairly simple thing to get.
Also of note, when Quan Chi says that "I haven't a life to give" line in Baraka's MK4 ending...he's omnipotent at the time, 'cause he just, like, conquered the universe and everything. So there's that.

Majority of people can't get your view on immortality just so. I believe the logical fact that comes to one's mind on hearing the term "immortality" is that no death whatsoever (!) can occur to an immortal, and that an immortal is either immune to getting burned/ chopped/ crushed/ shot, or will quickly regenerate after suffering those. Wrong as it might be, it's logical. What you write about is "biological" immortality, which certain organisms actually posses in real life (hydras, bacterial colonies, the species of jellyfish called 'Turritopsis Nutricula'). Hence my disagreement with the statement that people are wrong when they mix up "general" immortality with the "biological" one.

Death of a being which, otherwise, was able to exist for eons untouched by the effect of time, can only naturally incite confusion among those who were convinced that such being can never die.

Well Razor is right about the immortal thing. I mean take a look at Highlander. They're all immortal in there too but as you can see they can still be killed

Quan Chi is tricky, especially in Baraka's mk gold ending, so he probably is hard to kill

Quan chi might not be able to get killed, by he certainly is prone to getting his shit wrecked by Sub-Zero and Scorpion.

I will answer your question with a badass excerpt from Baraka's ending in MKGold.

BARAKA: Now, sorceror, you will pay with your life!

QUAN CHI: I haven't a life to give, you fool.

Maybe he can be killed, but then he'd come out of the Netherealm and say, "Yeah, well, where was I gonna go? Detroit?"

Quan Chi hasn't died yet, I do believe he can be killed but he's so tricky, and calculating that he's managed to survive even with Scorpion breathing down his neck.

Quan Chi died when Raiden blew himself up in the Deception opening. It was confirmed in Armageddon. I already said this.
