My favorite one is Scorpion's Flame, It's just a classic.
But I would have to pick Liu Kang's MK1 Uppercut (Because it's technically a fatality but without all that death and blood and stuff)

and if i had to choose i would use one involving a sword. because i always wanted to know how it feels to die by the sword like a real warrior does.
