What do you usually do to get the FIRST HIT BONUS?
With Sub-Zero, i usually dash and use standing 1 or down 4. They are two of his fastest moves and most people always guess that when they are fighting SZ, the person will automatically throw up an ice clone.
If I'm fighting the person for a second of third match. Once I have them trained as to how I will start out a round, being that I don't throw clone immediately, in the next match they will normally try to jump in, but then the standing 1 will just typically slap them out of the air. Or if the person has gotten really aggressive, I'll mash 2 continuously prior and through the words FIGHT! so when the action starts, it will beat them jumping in or dashing.
With Noob Saibot, a mash 4 constantly after FIGHT! so I can kick them away and get the first hit bonus. Again, it's one of his best up close moves and it usually interrupts any normal that someone tries to do.
But, it totally depends on how many matches I've played and how trained they or I have become. A good 'ol JIP, a few matches in typically gets me the bonus and leaves them guessing.
I guess to just try to read them and use whatever is fastest. Oddly enough, some people still fall for ice slide or shadow slide.
The one thing I really hate is trying to gauge how long until you can hit after the words FIGHT! are said. I know it's not immediate so guessing at the beginning of the round sucks. Online makes it different every time depending on the connection.

thing that i do is when the round starts with kung lao, immediately throw enhanced hat (hold triangle/Y). so your opponent starts blocking. than jump over him and while still holding triangle/Y jump-punch, b-X,X/A,A than connect spin. this gives you a big combo. if they block your spin, don't worry about a full punish just release the hat. (for maximum damage u can start the combo with teleport)
if they don't block at the start they jump, than just spin or NJP and the damage follows.
