There are only a handful of them: Kenshi (when you beat arcade mode), Kitana, Quan Chi, Frost, and Scorpion. For the latter four, you just have to wait at the screen after the intro FMV that says press start. There's also one for Blaze, when you beat Konquest with every character.

i've never seen Frost's kata?? and the only one that i've seen of scorpion is that early promo vid that plays?? or is that it??

did you know you can see kenshi with his alternate costume on if you complete it with a character with their alternate costume?

I sat watching the attract mode for about an hour the other day and yes, there's Kitana, Quan Chi, Scorpion, Frost and Blaze katas. In that order. But there's a lot of stuff in between 'em.
