My question is how acruate are these emulations? Difficulty? Speed? Gameplay? Are they close to the same as the arcade?

It depends on the drivers and who updates them.
Like in MAME .79, collision detection was somehow removed from MK1 (4.0 and 5.0 T-Unit). This of course was accidental.
It used to be that hacks for the DCS sound system were included to allow MK games to run fully on 800 MHz+ systems at 60Hz. But since MAME is about accuracy and not playablility, the hacks were removed, requiring now a much faster system and/or a monitor that supports 53Hz.
There are also items that are percieved as bugs that aren't really bugs (that is the emulated version is compared to an actual PCB to see if it's a bug in the game or not). Accuracy does include all bugs on an actual board.
A list of known bugs can be found HERE.
Right now, the only other known issue is Scorpion's "Get over here!" getting cut off in all MAME versions of UMK3. It should only be cut off in version 1.0, since Midway fixed that when 1.1 was released. MAME has it cut off in all versions of UMK3.

Scorpion's "Come..." and "Get..." after the spear is not a Mame glitch, it is like that in the arcade as well in 1.1 at least, as I have played 1.1 in the arcade, I have never played 1.0 on Mame. I'm pretty sure it has something to do with the blood splattering on the ground, you'll notice that seems to take priority over other sound effects as well because the Come here and get over here aren't the only things, if you do Kitana's fan, Kung Lao's hat or Stryker's gun, anything that causes the multiple blood drops to fly out in one direction makes that sound happen, and it blocks out other sounds like screams and stuff, cause I think they use up too many channels or something lol. Silly. I have tried turning off blood in UMK3, but I can't figure out how to select it on the dip switch screen so I'm guessing it's something we can't do, but if anyone can figure it out, see if the full Scorpion sound happens.
As long as you have a fast enough computer, the emulation for all the MK's on most current versions of Mame is perfect, except in UMK3 for some reason the pallet glitch happens on the selection screen when all 3 hiddens are enabled and if you hit start with player 1 first, P1's pallet corrupts the screen. It does not have to look like that as you will notice after about 4 matches the screen will be fine, then slowly get worse, but if you start with player 2 it doesn't. Sometimes Choose Your Destiny's pallet is messed up and everything is pink and gray.

Yeah my computers fine. I was wondering cause of few weird things I noticed. By the way, I don't remember how to unlock the characters in UMK3. Anyone care to help?

The dip switch for blood does work, but after you turn it off you have to press F3 (reset) to actually set it.
You can enable hidden characters with cheats if you have the cheat file, but it's manually like this:
Mileena: 22264-22264
Ermac: 12344-44321
Sub-Zero: 81835-81835
That site I listed also has an .nv ram file that will unlock them, I think. If you find it, unzip it to the /nv directory.

The sound in Mame in general sucks, it garbles worse than Genesis every few minutes.
How do I change the dip switch? I can't highlight anything.

You press Tab to bring up the menu, and you'll find the Dip Switches there.

OK cool, I forgot about dipswitch in tab menu, as suspected, without the blood he says Get over here and come here in full.

I can't get it to work. I downloaded the file but it is not working.

Make sure the nv file is in the nvram directory and that it is for the same revision you have on UMK3 incase you have.
