I don't know many preliminary names, but I know on the MKT for PSX disc Nightwolf's files were stored with the name Indian which I thought was funny. And Kung Lao's files were stored as HatHead.

Also on early screen shots of SNES MK3 Nightwolf's name was "Indian" under the energy bar.

The manual for the arcade version of MK4 calls Fujin "windgod" and there's a character listed as "Maki" who is probably Tanya or Kai.

I don't remember seeing those preliminary names in any screens. As a matter of fact, the early screens of the games had totally blank lifebars didn't they? I remember looking at a screen of I think Cyrax vs Sindel on the Pit 3 and there were no names in the lifebars.

You're right, the lifebars were blank.
I remember seenig a pic of Sindel vs. Cyrax, and their lifebars were blanked out; however Sindel had just won and it said MUCHACHA WINS

I remember reading an interesting rumour on gamefaqs that Jax (mk2) was originally going to be in mk1 and be called "Kurtis Stryker", but it may be just a rumour.
