Things missing from MKII on PS2

Okay, I have a question about the Midway Collections Volume 2 that have the arcade versions of Mortal Kombat II and Mortal Kombat 3. I haven't had a chance to play MK3 as much as MKII, so my focus will be on that. There are some things that I cannot seem to do with it that I could do in the arcade. For example, when I'm trying to fight Smoke, I can't press Start when "Toasty" comes out because I get that damn menu thing. Is that supposed to be that? Does that mean we can't ever fight Smoke on this version? If so, BAD BAD BAD. I was hoping for a true Arcade version of those games. Another thing I noticed was I can't seem to do Shang Tsung's Kintaro Morph fatality. I hold LP for the entire round, and I let the clock run until like 10 seconds left, but he just won't do it. Is that something else that was left out? I hope not. Could someone please shed some light on the problem?

I'm not sure about Tsung's Kintaro fatality, but the chance to fight Smoke has been taken completely out.

The Kintaro fatality is in the game, I've done it myself at least three times. You have to be a step away from your oponent when doing it. No need to let the clock run down to 10 seconds either. I just fight holding the LP button and at the end of the match let go with plenty of time to spare and still do it correctly. It's more like 30 seconds real time and not so much game clock.

Apart from the smoke and random select, I think it's virtually all there. Even the same cpu tactics work, where u can push them back (Side 2 only). And that strange voice u sometimes hear once u have preformed the deadpool fatality, is also there. I think the speed is also just a tad quicker then the arcade.

The Kintaro Morph's actual time is 25 clock seconds I believe, or if you start holding it before Shao Kahn says "Fight" you don't have to follow any time contraints, same goes for any other charge move/fatality.
