MKII was the most violent in my opinion, may more violent than MK3.

The torso rips were all very gruesome, with the chunks of flesh and the spine sticking out. In MK3 you had the floating hands and a nice clean cut that looked more like a steak than anything else.

Also, MKII had more gruesome blood graphics. MK3 used the "exploding" type of blood splattering in many cases; MKII would have more "splashing" blood and all these big globs whenever you'd knock a head or torso off. And of course you also had Jax's arm rip, with blood squirting all over the place, and that big splash of blood when Scorpion slit a guy's throat.

Plus MKII generally had more new graphics made specifically for fatalities... it was all cut and paste with MK3, as they didn't even fall over after having a torso/head ripped off. MKII had complete animations for torso-less bodies, bodies cut in half, bodies falling into the pit, etc.

With MK3 in general, you could tell that they were starting to give in to all the congressional pressure... lots of bloodless fatalities (Kabal) and fantasy stuff (MK1 drop, Gigantic Jax). Plus if I remember correctly, the only decapitation in the game was Sektor's animality. They didn't even have blood for Smoke's spear until UMK3.
