Why did Midway use red book audio for the PSOne versions of MK3/MKT?

They should have used streaming music, not only does it take up much less space but it also has the advantage of not ending and fading out and they could have put the fatality stage music and winning stage music from each stage if they had done that. I just never understood Midway's logic behind that. Mortal Kombat Trilogy would have benefited greatly from it because they would have had even more space left on the disc to include more conent.

If I had to guess it'd be because the red book is the easiest for the playstation to do. If you look at other 2D fighters, they often do not pull off the quality of graphics that MKT for PSX has, also, they had the space on the CD anyway, the game itself is tiny as heck.

MK3 for PC made really good use of redbook audio. They actually included the victory music for each stage (unlike the dead silence when you win a round in Trilogy). Plus there was bonus music from the arcade UMK3, and a whacked-out bonus track with backwards nursery rhymes.
