Def medium rare.
Well done doesnt give you any of the TRUE flavor from the steak. you know if a food critic comes in to your restaurant and orders a WELL DONE, they are not real critics.

i AM a vegetablist... and tofu is nasty. I do eat a lot of Quorn though :) of course it has to be cooked thoroughly, otherwise it's a food poisoning risk.

The medium-rare peeps, from my experience, seem to celebrate steak more than the well-done crowd. The former probably feels like the latter is missing out, and that leads to a sense of frustration. I don't personally feel this way about steak, but I do feel this way about sushi. A lot of my friends won't even try it because the very idea of raw fish is a put off.
That said, I don't look down on the well-done peeps. It's a leaner steak, it's less messy, and some people just aren't comfortable with semi-raw meat (Obviously it's safe to eat, but that doesn't take away the psychological element). But even though I can appreciate why someone would like a well-done steak, I don't get how someone can throw down $20 for one at a restaurant. Everything that makes steak expensive goes away when you fully cook it.
I was a well-done guy till I was about 15. I ate a rare steak one day. Haven't looked back since.
