I've been sitting checkin out Character Katas in demo mode and stuff... So far I've only seen Kitana, Quan Chi and Frost... (Not including Scorpion's FMV training) I got a PS2 BTW, I was wondering, are there only 3 characters in the hata mode? Or should I wait for more, or is it random for every copy that was made?

A form...A combination of techniques against an enemy that isn't there...Just practicing with noone. You can see them mainly in martial arts like Tai Chi, Pa Kua(Ba Gua in the game), Hsing-I(Xing Yi in the game), and other "soft/internal" martial arts...But some "hard/external" martial arts use them as well.
