Since I already talked about one of the styles I want for Jade to have, I'll talk about the other style.
She should of course have her Iron Staff as her weapon. The reason I'm not saying Bo staff is because Raiden is the one who is really use a Bo staff and using Bojutsu. Jade's staff fighting has more of a resemblance to Chinese staff fighting with the stance and moves.
Anyway, the next character will be Tanya.

Meh, it sucked in MKD in terms of gameplay due to lack of good lows, good combo mixups, and things like that. It only had one mid attack and it was attack 2.
Anyway, I think she should keep Yue Chuan for one of her styles.
Since you didn't name another character, I'm going to do the honors by picking Mokap.

I liked Yue Chan on her too, Zi Ran Men just seemed to have more powerful hits.
I don't think Mokap should even have a fighting style, he should just stand there and be able to move back and forth. Well, I mean you'd lose everytime you used him, but...who picks Mokap?

I don't care for Mokap. I just wanted to list him as a challenge. Personally, I'd rather see him with 2 made-up unarmed styles which I call Retro and Mix Mash. Retro is basically a combination of the various basic moves from the old MK games (sweep kick, roundhouse kick, side kick, uppercut, etc.) while Mix Mash is well...a mixture of techniques from the different styles in the game.

I think jeet kune do, it suited him really well in DA, and it was bruce lee's, they're both kung fu movie stars. plus it's a quick combo style, like his character. whatever the style, they should give him his low blow move back.

I think Smoke should have Moi Fah, actually. I liked it for Scorpion but since he'll likely have Hapkido again maybe it should be given to Smoke.

Actually, Jeet Kune Do is not a martial art, but rather a goal for which to achieve and one of the principles in Wing Chun. Jun Fan is the martial art that Bruce Lee created and it was basically his Wing Chun. Jun Fan is often called the "modified Wing Chun" that Bruce Lee created. However, the truth is that there's no such thing as "modified Wing Chun" since Wing Chun is a martial art that already sets itself up for modification to suit the individual. I personally think Jun Fan is great for Liu Kang.
Anyway, since the current character being chosen is Smoke, I'm going to say that I think he should keep Mi Tzu Chuan (Rice Ancestor Fist). It fits him, imo, mainly due to it being a Northern Chinese martial art and the Lin Kuei headquarters being located in Northern China. It's a fast, long-ranged style that has similarities to Cha Chuan, Tantui, and Shaolin.

kai, being a shaolin monk should use a shaolin style.. i'm with tiger.. tiger is powerful, and as a style(similar to the animal) there are virtually no retreats.. i think kai is a character that would rather keep moving down the center with deadly strikes, not one to dance around the opponent, or try to confuse them.. he strikes me as more of a go in, strike, and don't stop striking until they're dead.. and that's what tiger style is about..

You are one of the only people I have ever met that realized that JKD is not a style but a philosophy, there is hope left for Bruce.

Heh, I hope so. It's kind of silly that in the different fighting games (including MK), they portray Jeet Kune Do in a way much like how Bruce Lee is in the movies. However, how he is in the movies and how he is in real life is much much different. HIs Jeet Kune Do is not meant to be copied by anyone else as it is his personal expression. So Liu Kang's Jeet Kune Do would be different from Johnny Cage's Jeet Kune Do, not just by the techniques but how they are done and things like that.
But uh, since Darrius is the current character being chosen, I'm going say that he should use KFM (Keysi Fighting Method). a predetor style. I can't think of any style like it, but It should envolve jumping, tackling, hiting fast.... just trying to take the opponent down, without anything fancy. And also a very sharp, very intimidating looking single knife.
