I would say either scorpion or sub-zero.

Liu Kang, Raiden, Shujinko.

Raiden, because he is eternal. There is no personality he could not have been already. No martial Art he shouldn't have mastered by now...What-the-hell do you do in all that time?

Sub Zero. A cold warrior, that becomes the grandmaster of his clan all while avoiding death from Quan Chi and Scorpion. Oh and he has a brother that becomes a wraith, and a frosty sidekick.

Sub-Zero, Mileena, Li Mei, Havik and Kenshi.

Sub-Zero, for his storyline and personality. I liked that merciful side to him, despite growing up in the Lin Kuei, and would most likely have had some degree of anger for his brother's death, but he kept everything under control, and became a benevolent leader of the clan. I was pretty glad he didn't get tied into Scorpion's storyline too much either.

His capacity to forgive people is also something that makes him such a great character. He really could have killed Frost, once for stealing the medallion, and again for slaughtering most of the Lin Kuei warriors during Konquest, but instead, he just stuffed her in the freezer, time and time again.

Not sure what's in store for his future, but I'm hoping they'll keep things the way he is.
