I've heard that they were supposed to be love interests, but I cannot find anything story line wise that shows this.
Could anyone post any information that hints at this and is canon?

It's mainly speculation surrounding this scene of them interacting from Mortal Kombat Mythologies: Sub-Zero. There is no canon material otherwise supporting the speculation.
In that game she helps him out during his mission. The speculation is pretty unreasonable though. Considering that she's a demon and he's still human. Noob Saibot and Sareena maybe... but that's just as unlikely since he lacks compassion.

I wouldn't say that that's entirely true. At least with the younger Sub-Zero. When Sareena escapes the Netherealm she pledges alligence to him. She even goes back to the Netherealm, the place she was trying to escape from for an eternity, in order to protect Sub-Zero from harm.
Also in her Armaggedon ending she gains ice powers and teams up with Sub-Zero in order to freeze Quan Chi. And while its never explicitly stated its still hinted at on about the same level as Sonya/ Cage and Liu Kang/ Kitana
There is also the juxtapostion of the these to together. Everyone Sub-Zero has ever cared for has died or betrayed him. He is emotionally longing. Sareena wants to be good, and sees Sub-Zero as a way to become good. But she always seems to fall into old habits.
These two are textbook star crossed lovers. If these two ever did get together it would probably have disastrous results. But that's what makes the relationship so interesting.

I'll take that shot. I honestly thought the "relationship" ended when she found out she started dealing with the younger brother. That's as far as I remember.

Why not? It's not like that's completly unbelivable in this series. And for all we know when Sareena's in human form she could be biologically human.

It's always been my speculation that Sareena is in love with the mantle of Sub-Zero. So, it doesn't matter if it's Bi Han or Kuai Liang. She's not in love with any individual man.
She's in love with SUB-ZERO...the mantle...the warrior upon whom many a fighter has donned...
So, to her, nothing's changed since Bi Han died. To her, there was never Bi Han. There was only Sub-Zero.

That sounds like prejudice to me.
And since when is making babies the only reason to engage in a relationship? Even if it was, humans can mate with any remotely similar species in fantasy stories so it's not like they'd turn out to be biologically incompatible.
Anyway, I think there's actually more evidence for an emotional connection between Sareena and Kuai than there was for her and Bi-Han. I mean the first Sub-Zero she met was selfish and merciless. She's like the only victim he ever spared, and who knows why he did that exactly. And then they only had one short conversation ever. She wasn't smitten so much as desperate to get out of the Netherealm.
The second one is the one who was nice to her and offered to let her stay with the Lin Kuei. Kuai basically has all the traits Sareena probably would have been attracted to in his brother, but even stronger, namely hating Quan Chi and refusing to work for evil masters. But more importantly than that, he's kind hearted and willing to trust a demon rather that assume she was just born an evil monster.
And then she becomes so loyal to him that she'll even go to the place she hates the most and never wanted to return to, the Netherealm, to protect him from getting jumped by Noob and Quan. It went pretty poorly for her, granted, but that's called drama. It's the thought that counts.
It's not like they're a canon couple already, but if they'd done a straight sequel to MKA instead of MK9, it could easily be seen going that way. Sad to say, there's more story between the two in DA and Armageddon than there's been between Liu and Kitana in the past 7 canon games.

I pretty much agree with RazorsEdge701 on this one.
It would be more likely for Sareena to delevop feelings for Sub-Zero (II) simply based on the facts, that they have spent more time together. and it's clear as day that they both have respect for one another. as well as trust.
which is normally a good building block in a relationship, whether they be friends or more.
I suppose its how some would choose to look at it.

I would love to see a relationship between them, plus I'd be interested in seeing what their kid(s) would look like, being half Cryomancer, half Demon.

anyway, I hope Sareena will be able to get into the next game. I mean after thinking about it, MK4 should had her instead since cleary it's MKM:SZ, related but in the end she got shafted for Tanya and Fujin.

Yeah, I wouldn't mind seeing Sareena in the next game also.

We could get her into THIS game as DLC. She's like the fourth most requested name. We just have to request louder and more often on Twitter.
But I'll worry about Sareena only after they make DLC of Cyber-Smoke and an alt of Sub's MK3 costume with the eye scar, so I can at least pretend they didn't change the story while I'm playing arcade and vs. mode.
